Italian Sausage, Peppers, and Onions


 4 Italian sausages
 2 bell peppers, sliced
 1 large onion, sliced
2 tablespoons olive oil
 2 cloves garlic, minced
 1 teaspoon dried oregano
 Salt and pepper to taste
 1/4 cup white wine (optional)


1. Heat olive oil in a large skillet over medium heat. Add the sausages and cook until browned on all sides. Remove from skillet and set aside.
2. In the same skillet, add the onions and bell peppers. Cook until they are soft and slightly caramelized, about 8-10 minutes.
3. Add garlic and oregano, and cook for an additional minute.
4. Pour in white wine (if using) to deglaze the pan, scraping up any brown bits from the bottom of the skillet.
5. Return the sausages to the skillet. Cover and simmer for about 10 minutes, or until the sausages are cooked through.
6. Season with salt and pepper to taste and serve hot.
