Savory Spinach & Feta Puff Pastry Bites


 

Ingredients:

1 sheet puff pastry, thawed
1 cup fresh spinach, chopped
1/2 cup crumbled feta cheese
1/4 cup ricotta cheese
1 small onion, finely chopped
1 clove garlic, minced
1/4 teaspoon nutmeg
Salt and pepper to taste
1 egg (for egg wash)
1 tablespoon olive oil


Directions:

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sautéing for 2-3 minutes until softened.
Add the chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and allow to cool slightly.
In a mixing bowl, combine the spinach mixture with feta cheese, ricotta cheese, nutmeg, salt, and pepper. Stir well to combine.
Roll out the puff pastry sheet on a lightly floured surface. Cut into 3-inch squares.
Place a spoonful of the spinach and feta mixture in the center of each pastry square.
Fold the pastry squares into triangles or little bundles, pressing the edges to seal.
Brush the top of each pastry with a beaten egg to give them a golden finish.
Arrange the pastries on the prepared baking sheet and bake for 15-18 minutes, or until golden brown and puffed.
Allow the Spanakopita cookies to cool slightly before serving.
