Keto Reuben Chaffles


1 cup shredded mozzarella cheese
1/4 cup almond flour
2 tablespoons grated Parmesan cheese
1 large egg
1/2 teaspoon baking powder
1/2 teaspoon caraway seeds (optional)
Salt and pepper to taste
For the Reuben filling:
Thinly sliced corned beef or pastrami
Sauerkraut (make sure it’s drained well)
Sugar-free Russian dressing or Thousand Island dressing
Swiss cheese slices


Preheat your mini waffle maker: Plug in your mini waffle maker and let it preheat while you prepare the chaffle batter.
Make the chaffle batter: In a mixing bowl, combine the shredded mozzarella cheese, almond flour, grated Parmesan cheese, egg, baking powder, caraway seeds (if using), salt, and pepper. Mix until all ingredients are well combined.
Cook the chaffles: Once the waffle maker is preheated, lightly grease the plates with non-stick cooking spray. Spoon about 1/4 cup of the chaffle batter onto the center of the waffle maker. Close the lid and cook for 3-5 minutes, or until the chaffle is golden brown and crispy. Repeat with the remaining batter.
Assemble the Reuben chaffles: Place a slice of Swiss cheese on one chaffle, followed by a few slices of corned beef or pastrami, a spoonful of sauerkraut, and a drizzle of sugar-free Russian dressing or Thousand Island dressing. Top with another chaffle to make a sandwich.
