Slow Cooker Beef Ramen Noodles



INGREDIENTS:

1 pound ground beef

1 cup matchstick carrots

1 red bell pepper, sliced

2-3 scallions, roughly chopped

3 garlic cloves, minced

1/2 cup low sodium soy sauce

1/2 cup brown sugar

1 can (14.5 ounce) chicken stock

2 ramen noodle packets (discard seasoning packets)

Sesame seeds for garnish (optional)

Additional scallions for garnish (optional)

DIRECTIONS:

Brown and drain the ground beef.

Transfer the beef to a slow cooker.

Add carrots, red bell pepper, and scallions to the cooker.

In a separate bowl, mix together garlic, soy sauce, brown sugar, and chicken stock.

Pour the sauce mixture into the slow cooker and stir to combine.

Cook on low for 4-6 hours.

About 30 minutes before serving, add the dry ramen noodles, ensuring they are well-covered and stir frequently.

Once noodles are tender, serve the dish garnished with scallions and sesame seeds.
