Pecan Pie Cheesecake


 Ingredients:

 1 cup graham cracker crumbs  
 1/2 cup unsalted butter, melted  
 1 cup sugar  
 4 packages (8 ounces each) cream cheese, softened  
 1 teaspoon vanilla extract  
 4 large eggs  
 1 cup chopped pecans  
 1 cup corn syrup  
 1/2 cup brown sugar  
 1 teaspoon vanilla extract  


 Directions:

 1. First things first, go ahead and preheat your oven to 350°F (175°C).
 2. Grab a bowl and stir together the graham cracker crumbs with the melted butter. Once it’s nicely mixed, press the mixture into the bottom of a 9-inch springform pan to form your base.
 3. In a large bowl, beat together the softened cream cheese and sugar until everything is creamy and smooth. Mix in the vanilla.
 4. Add your eggs, one at a time, making sure to beat gently after each one goes in.
 5. Pour half of this creamy mixture over the crust in your pan and smooth it out.
 6. In a separate bowl, mix together the chopped pecans, corn syrup, brown sugar, and the extra bit of vanilla. Pour this nutty pecan layer over the cream cheese you just added to the pan.
 7. Gently pour the remaining cream cheese mixture over the pecan layer and smooth the top.
 8. Pop your cheesecake into the oven and bake for 60 to 70 minutes, or until the center is set and doesn’t jiggle.
 9. When it’s done, let the cheesecake cool completely before loosening it from the pan and serving. Enjoy every delicious, creamy bite!
