Ingredients:
3-4 pounds beef chuck roast
Salt and pepper, to taste
2 tablespoons olive oil
1 onion, chopped
4 cloves garlic, minced
4 carrots, chopped
4 potatoes, chopped
2 cups beef broth
2 tablespoons Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
Directions :
1. Generously season your beef chuck roast with salt and pepper on all sides.
2. Set your Instant Pot to 'Sauté' and drizzle in the olive oil. Once it’s warm, brown the roast on all sides, working in batches if needed.
3. Take out the roast and set it aside for a moment.
4. Toss the chopped onion and minced garlic into the pot, letting them cook until they’re aromatic and soft.
5. Place the browned roast back into the pot.
6. Add your chopped carrots and potatoes, then pour in the beef broth and Worcestershire sauce. Sprinkle in the thyme and rosemary.
7. Secure the lid and set your Instant Pot to 'Manual' (high pressure) for 60 minutes.
8. When the cooking time is up, let the pressure release naturally for 15 minutes, then carefully release any remaining pressure with a quick release.
9. Remove the roast and vegetables from the pot, slice or shred the meat as you like, and serve it up warm with the flavorful veggies and broth. Enjoy!
