Ingredients:
1 lb carne asada
2 cups Mexican rice
1 red bell pepper, sliced
1 onion, sliced
2 tablespoons olive oil
Salt and pepper to taste
Fresh cilantro for garnish
Lime wedges for serving
Directions:
1. Give your carne asada a flavorful head start by marinating it in your favorite marinade for at least 30 minutes.
2. Fire up your grill to medium-high and cook the carne asada for about 6 to 8 minutes per side, or until it’s cooked to your liking. Take it off the heat and let it rest for a few minutes before slicing—it’ll be extra juicy.
3. While the steak is resting, heat the olive oil in a skillet over medium heat. Toss in the sliced onion and red bell pepper, sprinkle with a little salt and pepper, and cook until they’re softened and have a bit of smoky char, about 5 to 7 minutes.
4. Prepare the Mexican rice according to the package instructions, so it’s hot and fluffy.
5. Slice your rested carne asada and arrange it on plates. Top with those beautifully grilled peppers and onions, and serve it all up with a generous helping of Mexican rice on the side. Garnish with a sprinkle of fresh cilantro and a wedge of lime for that finishing touch.
