Shrimp Scampi


Ingredients:

 1 pound large shrimp, peeled and deveined
 Salt and freshly ground black pepper to taste
 1 tablespoon olive oil
 2 tablespoons unsalted butter
5 cloves garlic, minced
1/2 cup dry white wine
 Juice of 1 lemon
 1/4 cup finely chopped parsley
 Red pepper flakes to taste (optional)
 8 ounces linguine or your choice of pasta, cooked al dente


 Directions:

1. Season the shrimp with salt and pepper.
2. Heat the olive oil in a large pan over medium-high heat. Add the shrimp and cook until they are pink and opaque, about 2-3 minutes per side. Remove the shrimp from the pan and set aside.
3. In the same pan, reduce the heat to medium. Add the butter and garlic, cooking until the garlic is fragrant, about 1 minute.
4. Pour in the white wine and lemon juice, scraping any browned bits off the bottom of the pan. Let the sauce reduce by half, about 2-3 minutes.
5. Return the shrimp to the pan, add the parsley and red pepper flakes (if using), and stir well to combine. Cook for an additional 1-2 minutes, or until the shrimp are heated through.
6. Serve the shrimp over cooked pasta, garnished with more parsley if desired.
