Smoked Chicken Wings

Ingredients:

 2 lbs chicken wings
 1 tablespoon baking powder
 1 teaspoon salt
 1 teaspoon black pepper
 1 teaspoon garlic powder
 1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (optional for heat)
 1/4 cup apple cider vinegar
 1/4 cup honey
 1/4 cup soy sauce
 1 tablespoon olive oil

Directions:

1. In a large bowl, mix the baking powder, salt, black pepper, garlic powder, smoked paprika, and cayenne pepper.
2. Add chicken wings to the bowl and toss to coat evenly with the spice mix.
3. Preheat your smoker to 250°F (120°C).
4. Place the chicken wings in the smoker and cook for 2 hours, or until the internal temperature reaches 165°F (74°C).
5. While the wings are smoking, prepare the glaze by combining apple cider vinegar, honey, soy sauce, and olive oil in a saucepan over medium heat. Simmer until the mixture reduces by half and thickens, about 10-15 minutes.
6. Once the wings are cooked, toss them in the glaze to coat evenly.
7. Serve hot with your choice of dipping sauce.
