Seasoned fries with a side of ketchup

Ingredients:

Potatoes, cut into sticks or wedges
Vegetable oil, for frying
Paprika
Garlic powder
Onion powder
Salt
Pepper
Optional: cayenne pepper for heat, dried herbs for extra flavor

Instructions:

Rinse the potato sticks in water to remove excess starch and then dry them thoroughly with a clean towel.
Heat oil in a deep fryer or a large, deep skillet to 375°F (190°C).
In batches, fry the potato sticks until they’re golden brown and crispy, usually about 5-7 minutes.
While the fries are frying, mix together the paprika, garlic powder, onion powder, salt, pepper, and any other seasonings you prefer in a large bowl.
As soon as the fries come out of the fryer, toss them in the seasoning mix while they're still hot so the seasoning sticks well.
Serve immediately with ketchup or your favorite dipping sauce.
Remember to be careful when working with hot oil, and adjust the seasoning mix to taste.
