Homemade keto chocolate cake


For the Keto Chocolate Cake:
2 cups almond flour
3/4 cup granulated erythritol (or another keto-friendly sweetener)
1/2 cup unsweetened cocoa powder
1 tsp baking powder
1/2 tsp salt
4 large eggs
1/2 cup unsalted butter, melted
1 tsp vanilla extract
3/4 cup unsweetened almond milk
For the Cheesy Mash:
1 large cauliflower head, cut into florets
1/2 cup cream cheese, softened
1 cup shredded cheddar cheese
Salt and pepper to taste
Optional: Chives or green onions for garnish


Keto Chocolate Cake:
Preheat your oven to 350°F (175°C). Grease a 9-inch cake pan and line it with parchment paper.
In a large bowl, whisk together the almond flour, erythritol, cocoa powder, baking powder, and salt.
In another bowl, beat the eggs, then mix in the melted butter, vanilla extract, and almond milk.
Combine the wet ingredients with the dry ingredients, stirring until well incorporated.
Pour the batter into the prepared cake pan and smooth the top with a spatula.
Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Let the cake cool completely before serving.
Cheesy Mash:
Steam the cauliflower florets until very tender, about 15-20 minutes.
In a large bowl, mash the steamed cauliflower with a potato masher or blend in a food processor for a smoother texture.
Mix in the cream cheese and shredded cheddar until well combined and creamy. Season with salt and pepper to taste.
Garnish with chives or green onions if desired.
