Ingredients (Serves 4–6):
12 fresh jalapeño peppers, halved lengthwise and seeds removed
8 oz (225 g) cream cheese, softened
1 cup shredded cheddar cheese (or a mix of cheddar & Monterey Jack)
½ cup cooked bacon, crumbled
½ cup cooked breakfast sausage or ground beef (optional, for extra flavor)
1 tsp garlic powder
½ tsp smoked paprika
¼ tsp black pepper
2 tbsp green onions, chopped (optional)
Instructions:
1. Prep the jalapeños
Slice each jalapeño in half lengthwise.
Use a spoon to remove seeds and membranes (wear gloves if needed to avoid irritation).
2. Make the filling
In a bowl, mix cream cheese, shredded cheese, garlic powder, smoked paprika, pepper, bacon bits, and cooked sausage (if using) until well combined.
3. Stuff the jalapeños
Fill each jalapeño half generously with the cheese mixture.
Arrange them in a cast iron skillet or baking sheet.
4. Cook
Oven method: Preheat oven to 200°C (400°F) and bake for 15–20 min until cheese is melted and bubbly.
Grill method: Place jalapeños on indirect heat, close lid, and cook for about 15 min until peppers are tender and cheese is melted.
5. Serve
Sprinkle with extra bacon bits or chopped green onions.
Serve warm with ranch dressing or sour cream for dipping.
