Ingredients:
• 2 pounds of lamb chops
• 1/2cup honey
-Walkerswood Jerk Marinade
-Caribbean Jerk 30 Minute Marinade (optional)
• 2 tablespoons olive oil
• 2 tablespoons of garlic purée
-1 tablespoon of puréed ginger
-2 tablespoons of Cajun Seasoning (Tony’s or similar)
-1 tablespoon of Garlic and Onion powder
(You can use any of your favorite seasonings)
Instructions:
1. Preheat the skillet on stovetop or use outdoor grill for best results.
2. In a bowl add cleaned lamb chops , pour in jerk marinade then add in garlic, ginger and seasonings.
3. Make sure each lamb chop is evenly coated with jerk marinade mixture.
4. (Stove top instructions)Add olive oil to the preheated pan and sear the lamb chops for 3-4 minutes per side, or until cooked to your desired level of doneness. Drizzle honey over lamb chops and sear on each side an additional 1-2 minutes.
(Grilling instructions)
Heat the grill to medium-high heat.Sear the lamb chops: Place the lamb chops on the grill and sear for about 4 minutes per side, or until a nice crust forms.
Finish cooking: After searing, move the lamb chops to a cooler part of the grill. Drizzle honey evenly over each lamb chop. Grill on each side and additional minute. Remove from grill, let rest a few minutes.
5. Remove from heat and let rest for a few minutes before serving.
