Ingredients:
4 chicken breasts
1 cup asparagus, chopped
1 cup cream cheese, softened
1/2 cup shredded mozzarella cheese
1 clove garlic, minced
Salt and pepper to taste
Olive oil
Directions:
1. Go ahead and preheat your oven to 375°F (190°C).
2. In a mixing bowl, stir together the cream cheese, shredded mozzarella, minced garlic, chopped asparagus, and a sprinkle of salt and pepper. Make sure it’s all nicely combined.
3. Using a sharp knife, carefully cut a pocket into the side of each chicken breast—don’t cut all the way through, just enough space to stuff.
4. Spoon the cheesy asparagus mixture evenly inside each chicken pocket.
5. Sprinkle a little more salt and pepper over the outside of the chicken breasts so they’re well seasoned.
6. Heat a drizzle of olive oil in a large skillet over medium heat. Once it’s warm, add your stuffed chicken breasts and sear them for about 3-4 minutes on each side, until they turn a lovely golden color.
7. Transfer the seared chicken to a baking dish. Pop it in the oven and bake for 20-25 minutes, or until the chicken is completely cooked through and juicy.
8. Let the chicken rest for a few minutes before serving, so all those delicious flavors settle in.
