Ingredients:
• 2–3 lbs turkey necks (cleaned and trimmed)
• 1 red bell pepper, sliced
• 1 orange bell pepper, sliced
• 1 green bell pepper, sliced
• 1 large onion, sliced
• 4 cloves garlic, minced
• 1 tbsp paprika
• 1 tsp black pepper
• 1 tsp onion powder
• 1 tsp garlic powder
• 1 tsp thyme
• 1 tsp cayenne pepper (optional)
• Salt to taste
• 2 tbsp oil
• 2 cups chicken broth or water
• 1 tbsp Worcestershire sauce (optional)
Directions:
1. Season the turkey necks with all your dry spices. Let them marinate for 30 mins (or overnight if you have time!).
2. Sear the necks in a hot pot with oil until browned. Remove and set aside.
3. In the same pot, sauté onions and bell peppers until softened. Add minced garlic and cook for 1 more minute.
4. Return the turkey necks to the pot. Add broth (enough to mostly cover) and Worcestershire sauce.
5. Bring to a boil, then simmer on low for 2–2.5 hours until the meat is fork-tender and falling off the bone.
6. Taste, adjust seasonings, and let the liquid reduce a bit if you want it thicker.
