Ingredients:
For the salad:
4 cups mixed greens (lettuce, arugula, spinach)
1 large tomato, diced or sliced
½ red onion, thinly sliced
½ cucumber, peeled into ribbons
½ cup cooked yellow corn
For the chicken:
1 chicken breast
1 tbsp olive oil
Salt & pepper to taste
½ tsp paprika (optional)
For the Greek-style blue cheese dressing:
¼ cup Greek yogurt
2 tbsp crumbled blue cheese
1 tbsp lemon juice
1 tbsp olive oil
½ tsp garlic powder
Salt & black pepper to taste
Instructions:
Prepare the Chicken:
Rub the chicken breast with olive oil, salt, pepper, and paprika.
Grill over medium heat for 5–7 minutes per side until cooked through.
Let it rest for 5 minutes, then slice thinly.
Make the Dressing:
In a small bowl, whisk Greek yogurt, blue cheese, lemon juice, olive oil, garlic powder, salt, and pepper until creamy. If it's too thick, add a splash of water or milk.
Assemble the Salad:
In a large bowl or plate, arrange mixed greens.
Top with tomatoes, red onion slices, cucumber ribbons, and corn.
Drizzle with the blue cheese dressing.
Add the sliced grilled chicken on top or on the side.
Optional: Serve extra dressing in a small bowl on the side.
