Creamy Beef Spaghetti with 3-Cheese Parmesan Sauce


Ingredients:

1½ lbs ground beef
12 oz spaghetti
2 tablespoons olive oil
1 tablespoon Cajun seasoning
1 teaspoon smoked paprika
½ teaspoon onion powder
½ teaspoon garlic powder
Salt & pepper to taste
4 cloves garlic, minced
1 cup heavy cream
¾ cup grated Parmesan cheese
1 cup shredded cheddar or mozzarella cheese
½ cup reserved pasta water (if needed to thin sauce)
Fresh parsley or green onions, for garnish


Directions:

1.⁠ ⁠Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Before draining, scoop out about ½ cup of the pasta water in case you need it later to thin the sauce. Set the pasta aside.

2.⁠ ⁠In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook, breaking it up with a spoon, until it’s fully browned and no longer pink.
Sprinkle in the Cajun seasoning, smoked paprika, onion powder, garlic powder, and a bit of salt and pepper. Stir everything together so the beef is well coated in all those spices.

3.⁠ ⁠Add the minced garlic and cook for about 1 minute, just until it smells amazing. Pour in the heavy cream and stir in the Parmesan and cheddar (or mozzarella) cheese. Let it simmer gently for a few minutes, stirring often, until the sauce turns creamy and smooth. If it seems too thick, add a splash of the reserved pasta water to loosen it up.

4.⁠ ⁠Add the cooked spaghetti to the skillet and toss it with the cheesy Cajun beef sauce until everything is well mixed and coated.
