Ingredients:
1½ lbs ground beef
12 oz spaghetti
2 tablespoons olive oil
1 tablespoon Cajun seasoning
1 teaspoon smoked paprika
½ teaspoon onion powder
½ teaspoon garlic powder
Salt & pepper to taste
4 cloves garlic, minced
1 cup heavy cream
¾ cup grated Parmesan cheese
1 cup shredded cheddar or mozzarella cheese
½ cup reserved pasta water (if needed to thin sauce)
Fresh parsley or green onions, for garnish
Directions:
1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Before draining, scoop out about ½ cup of the pasta water in case you need it later to thin the sauce. Set the pasta aside.
2. In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook, breaking it up with a spoon, until it’s fully browned and no longer pink.
Sprinkle in the Cajun seasoning, smoked paprika, onion powder, garlic powder, and a bit of salt and pepper. Stir everything together so the beef is well coated in all those spices.
3. Add the minced garlic and cook for about 1 minute, just until it smells amazing. Pour in the heavy cream and stir in the Parmesan and cheddar (or mozzarella) cheese. Let it simmer gently for a few minutes, stirring often, until the sauce turns creamy and smooth. If it seems too thick, add a splash of the reserved pasta water to loosen it up.
4. Add the cooked spaghetti to the skillet and toss it with the cheesy Cajun beef sauce until everything is well mixed and coated.
