Shrimp and Grits Scrambled Cheese Eggs Fried Spam



Ingredients:


 1 pound large shrimp, peeled and deveined
 1 cup stone-ground grits
 4 cups water
 1 cup shredded cheddar cheese
 4 large eggs
 1/4 cup milk
 Salt and pepper to taste
 1 can (12 ounces) Spam, sliced
 2 tablespoons butter
 2 green onions, chopped
Hot sauce, for serving (optional)


Directions:


1. In a medium saucepan, bring water to a boil. Stir in the grits and reduce heat to low. Cook, stirring occasionally, until thickened, about 20 minutes. Stir in the shredded cheddar cheese until melted. Season with salt and pepper to taste. Keep warm.

2. In a bowl, whisk together the eggs and milk. Season with salt and pepper.

3. In a large skillet, melt the butter over medium heat. Add the eggs and cook, stirring occasionally, until scrambled and set. Stir in the chopped green onions.

4. In another skillet, heat some oil over medium-high heat. Add the Spam slices and cook until browned and crispy on both sides.

5. Meanwhile, in the same skillet used for the eggs, add the shrimp and cook until pink and opaque, about 2-3 minutes per side.

6. To serve, divide the cheesy grits among plates. Top with scrambled eggs, fried Spam slices, and cooked shrimp. Serve hot with hot sauce on the side if desired.
