Ingredients:
For the filling:
- 500g minced beef or lamb
- 1 onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 200ml beef or vegetable broth
- Salt and pepper to taste
- 1 tablespoon olive oil
For the cheesy mash:
- 4 large potatoes, peeled and diced
- 50g butter
- 100ml milk
- 100g grated cheddar cheese
- Salt and pepper to taste
Instructions:
1. Prepare the filling:
- Heat olive oil in a pan over medium heat. Add diced onions and carrots, and cook until softened.
- Add minced garlic and cook for another minute.
- Add minced beef or lamb to the pan and cook until browned.
- Stir in tomato paste, Worcestershire sauce, and beef or vegetable broth. Season with salt and pepper to taste. Let it simmer for 10-15 minutes until the sauce thickens. Set aside.
2. Prepare the cheesy mash:
- Place diced potatoes in a large pot of salted water. Bring to a boil and cook until potatoes are fork-tender.
- Drain the potatoes and return them to the pot. Add butter, milk, grated cheddar cheese, salt, and pepper. Mash until smooth and creamy.
3. Assemble the cottage pie:
- Preheat your air fryer to 180°C (350°F).
- Transfer the prepared filling into a baking dish or individual ramekins.
- Top the filling with the cheesy mash, spreading it evenly to cover the filling completely.
4. Air fry the cottage pie:
- Place the assembled cottage pie(s) into the air fryer basket. You may need to do this in batches depending on the size of your air fryer.
- Air fry for 15-20 minutes, or until the top is golden brown and the filling is bubbling.
5. Serve:
- Once done, remove the cottage pie(s) from the air fryer and let them cool for a few minutes before serving.
- Garnish with some freshly chopped parsley, if desired, and enjoy!
