Ingredients:
1 lb ground beef
1 cup chopped onion
1 (28 oz) can maple cured bacon baked beans, undrained (or any baked beans you love!)
3 to 4 medium red potatoes
Directions:
Prepare the Potatoes:
In a large pot, boil the red potatoes whole (skin on is fine!) for about 15–20 minutes or until they’re fork-tender. Once done, drain and let them cool slightly so you can handle them. Then peel and chop them into bite-sized chunks. Red potatoes are great because they stay firm without getting mushy!
Cook the Ground Beef:
Heat a large skillet over medium heat. Add the ground beef and chopped onion, cooking for about 6–8 minutes. Stir occasionally until the beef is fully browned and the onions are soft and fragrant. Drain off any excess grease to keep things from getting too oily.
Mix and Simmer:
Stir in the can of baked beans (juice and all) and your cooked potatoes. Mix everything gently but thoroughly so the potatoes don’t break apart too much. Reduce heat to low, cover the skillet, and let it all simmer together for about 20 minutes. This lets the flavors meld into something magical.
